The Mechanical Cell Burst process ruptures the
cell walls and releases the fresh cytoplasm. This process
maintains and ensures the viability of vitamins, amino acids,
gels and enzymes contained in fresh kelp cytoplasm. In
addition to these organic compounds, Ecklonia cytoplasm also
provides a wide range of trace minerals to the final product.
These molecules are delicate and are easily
denatured by extreme temperatures, pH ranges and dehydration.
For this reason, harsh processing activities such as heat,
dehydration, hydrolyses (chemical digestion) and/or freezing,
commonly used by other seaweed processors, are not utilized

Kelp has a high content of organic gels
including alginates. The natural gels are released during the
